Here in Sherman County, farming isn’t just a job. It’s family history.
Nathan farms alongside his dad, Carl, continuing the work that generations before them started. Together they grow corn and soybeans and raise Black Angus cattle on the same land that has sustained their family for decades. Carl and his wife, Jolie, are still part of the daily rhythm of the farm — sharing their wisdom, lending a hand, and helping carry forward the traditions that built this place.
Just down the road, Nathan and his wife Katie are raising their daughter, Ada Jo, in the middle of it all — surrounded by tractors, cattle, and the same Nebraska sunsets that generations of Larsons have watched before them.
Diamond Seven Beef is part of that legacy.
The name comes from the Larson family cattle brand — a simple diamond over a seven — a mark that represents the pride, responsibility, and care that goes into every animal raised here.
Our cattle are born here. They’re raised here. And they’re cared for every single day by our family.
We calve in the winter, when the work can mean long nights in the cold and early mornings checking pastures. From bottle calves to full-grown cattle, we raise them from birth through finishing, personally feeding, checking, and caring for them every step of the way.
Because to us, cattle aren’t just inventory — they’re animals we’ve raised with our own hands.

Where is your beef from?
Our beef is raised on our family farm in Hazard, Nebraska. We care for our cattle daily and take pride in raising high-quality beef from start to finish.
DO YOU USE ADDED HORMONES OR ANTIBIOTICS?
No added hormones are used in our cattle. We vaccinate as needed to protect the health and wellbeing of the herd. Antibiotics are used to treat sick or injured animals. We follow withholding periods of any medicine that we use.
IS YOUR BEEF GRASS-FED OR GRAIN-FINISHED?
Our cattle graze pasture or cornstalks the majority of their life and are finished on a balanced grain ration to ensure excellent flavor, tenderness, and consistency.
IS YOUR BEEF USDA INSPECTED?
Yes. All of our beef is USDA inspected and approved to ensure it meets food safety and standards.
Where is your beef processed?
Our beef is processed at Ord Locker in Ord, NE, a USDA-inspected facility we trust.
what does "dry-aged" mean?
Dry aging is when beef rests in a cold, controlled environment for a few weeks. During this time, some moisture naturally leaves the meat, which helps concentrate the flavor and makes the beef more tender.
